Description

I’m a fanatic for BBQ chicken pizza. The first BBQ chicken pizza I ever tasted was at Schlotzsky’s and I’ve been hooked ever since. The crust for these is a store bought flatbread which makes this recipe quick and easy! I make my own BBQ sauce, but you can easily substitute your favorite bottle of BBQ sauce to save even more time.

Ingredients

  • 3 Tablespoons Olive Oil, Divided
  • ½ teaspoons Salt
  • ½ teaspoons Black Pepper, Divided Use
  • 1 pound Boneless, Skinless Chicken Breast, Pounded To 1/2 Inch Thickness
  • 4  Flatbreads (I Used Toufayan Whole Wheat Flatbread)
  • 1 cup Ketchup
  • 3 teaspoons Yellow Mustard
  • 2 Tablespoons Worcestershire Sauce
  • 2 Tablespoons Brown Sugar
  • 1 Tablespoon Molasses
  • 1 teaspoon Dry Mustard
  • ¼  Sweet Onion, Thinly Sliced
  • 2 cups Shredded Colby And Monterey Jack Cheese Blend

Preparation

Mix together 2 tablespoons olive oil with salt and 1/4 teaspoon of the black pepper and brush both sides of chicken with oil mixture. Grill chicken over medium heat until juices run clear (this will take 5 minutes per side or maybe a little less since the breasts are pounded flat). Slice chicken into thin strips.

Preheat oven to 400 degrees F. Place flatbreads on a baking sheet and brush with remaining 1 tablespoon olive oil. Bake flatbreads 5 minutes then remove from the oven.

In the meantime, make the BBQ sauce by whisking together ketchup, yellow mustard, Worcestershire sauce, brown sugar, molasses, dry mustard, and remaining 1/4 teaspoon of the black pepper. Set aside.

Remove flatbreads from oven and spread BBQ sauce evenly on top of each flatbread. Arrange chicken slices on each flatbread and sprinkle with onions and cheese. Bake 10 to 12 minutes or until cheese is melted and bubbly.
