Description

Mini turkey meatballs, stuffed with white cheddar cheese, brushed with BBQ sauce, and sandwiched between little whole wheat buns. Heaven.

Ingredients

  • FOR THE MEATBALLS:
  • ½ cups Onion, Diced
  • 3 cloves Garlic, Minced
  • 1 whole Egg
  • 1 teaspoon Pepper
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Garlic Salt
  • 1 teaspoon Garlic Powder
  • ½ cups Whole Wheat Bread Crumbs
  • 2 Tablespoons Worcestershire Sauce
  • 1 pound Ground Turkey
  • ½ cups Sharp White Cheddar Cheese, Cut Into Small Cubes
  • FOR THE ASSEMBLY:
  • ¼ cups BBQ Sauce
  • ¼ cups Water
  • 8 whole Mini Whole Wheat Buns, Or Dinner Rolls
  • 1 cup Lettuce, Torn
  • ½ cups Cherry Tomatoes, Cut In Half
  • ½ cups Purple Onion, Sliced
  • ½ cups BBQ Sauce, For Dipping

Preparation

Preheat oven to 425 F.

Get a 9×13 baking dish out and place the 1/4 cup BBQ sauce and 1/4 cup water in the dish. Mix and set aside.

In a large bowl, working from the meatball ingredients list, combine onion, garlic, egg, pepper, smoked paprika, garlic salt, garlic powder, bread crumbs, and Worcestershire sauce. Blend well. Add in ground turkey and mix just until combined. Do not over mix; this will result in tough meatballs.

Once combined, form turkey into golf ball sized meatballs. Tuck 1 cube of white cheddar into each of the formed meatballs and make sure meat covers the cheese.

Place meatballs in the baking dish with the BBQ sauce mixture. Brush the tops of meatballs with BBQ sauce if desired.

Bake for 35 minutes, or until cooked through. Remove pan from the oven and assemble the meatballs onto mini buns with lettuce, onions, tomatoes, and serve with extra BBQ sauce for dipping.
