Description

This is a beautiful salmon dish you could definitely make next time you have company coming, and you could fool them into thinking you slaved for hours! Add some cheddar cheese biscuits and you have a perfect meal!

Ingredients

  • 2 whole Salmon Steaks, 6-ounce Size
  • 6 cups Mixed Greens
  • 10 whole Cherry Tomatoes, Halved
  • ½ cups Freshly Shaved Parmesan For Topping The Salad
  • 1 jar (6 Oz. Jar) Marinated Artichoke Hearts, To Serve

  • FOR THE GLAZE:
  • ¼ cups Balsamic Vinegar
  • ¼ cups Water
  • 1 Tablespoon Fresh Lemon Juice
  • 2 Tablespoons Packed Brown Sugar

Preparation

Mix the glaze ingredients and put aside. Pat salmon dry with paper towels. Salt and pepper well. Heat oil in a nonstick pan over medium high heat. Cook salmon for four minutes on each side or until cooked through. Remove from the pan.

Carefully add the glaze mixture to the pan and keep stirring until thickened and reduced a little. Place salmon over a bed of greens and drizzle the glaze over the salmon. I like to drizzle it over the salad, too. I served this with cherry tomatoes, shaved Parmesan and artichoke hearts on the plate, too.
