Description

A quick and easy recipe for weeknights that is good enough for company.

Ingredients

  • ½ cups Balsamic Vinegar
  • 2 Tablespoons Honey
  • ½ cups Breadcrumbs
  • ¼ cups Parmesan Cheese, Grated
  • ½ pounds Chicken Breast, Boneless, Skinless
  • 2 Tablespoons Olive Oil

Preparation

Mix the balsamic vinegar and honey together and set aside.

Mix the breadcrumbs and the Parmesan cheese. Pound the chicken to 1/2-inch thickness.

Heat a frying pan to medium-high heat. Add olive oil. While it is heating up, press the chicken into the breadcrumb mixture to coat lightly.

Sauté the chicken until done, about 3 minutes each side. Remove chicken from the pan and keep warm.

Carefully pour balsamic vinegar mixture into the fry pan and stir. It may splatter some, so be careful. Once it starts to thicken up, add the chicken back in to coat it.

To serve, place the chicken on a platter and pour sauce over it. I serve it with rice and steamed broccoli.

Yum yum yum! All I had in the house were panko bread crumbs so I used those. I think I’ll have to give it a try with regular bread crumbs. I have to admit I was scared when I poured the balsamic and honey mixture into the pan because the fumes cleared my sinuses and made my eyes water, but this was soooooo good!

I made this chicken dish last night and it was delicious. I was amazed that something so easy, flavorful and tender could be so easy….just minutes to prepare. I will definitely be making this again and again.

Made this tonight. I loved it. My husband liked it. The kids didn’t care for it. So, I personally think it’s 5-stars, but the flavor was a little bold for the kids. But I will definitely make this again for myself!

Awesome recipe!!

I was a little afraid when I poured the balsamic in the pan, and my husband walked in the door and declared that “something stinks!” and “it’s making my face pucker!”

But once we dug in, SO GOOD. It does not taste at all like it smells. YUMYUM and super easy. We will definitely be eating this again!
