Description

Crispy, baked goodness! These taquitos are quick and easy and will have your family shouting, “Ole!” They freeze well, too!

Ingredients

  • 2 cups Cooked And Shredded Chicken, Beef Or Pork
  • 3 Tablespoons Water
  • 2 Tablespoons Taco Seasoning
  • 12 pieces Yellow Corn Tortillas
  • 2 cups Shredded Monterey Jack Cheese
  • 1 Tablespoon Coarse Salt
  • 1 cup Salsa
  • 1 cup Sour Cream
  • 1 cup Guacamole

Preparation

Preheat oven to 400ºF.

Line a large baking sheet with foil and spray lightly with cooking spray.

Heat your precooked meat of choice with water and taco seasoning until warmed through and water has evaporated.

In the microwave, heat 3 or 4 tortillas at a time on a microwavable plate, with paper towels on the bottom and top. This will soften tortillas for rolling.

Remove one tortilla at a time and place about 2 tablespoons of meat in the center. Sprinkle with 2 tablespoons shredded cheese. Roll tightly and place seam-side down on a baking sheet. Be careful not to tear the tortilla. Repeat with the remaining tortillas, meat and cheese. Spray the tops of the taquitos lightly with cooking spray and sprinkle coarse salt lightly over the tops.

Bake for 10 to 15 minutes until golden brown. Serve warm with salsa, guacamole and/or sour cream for dipping. Enjoy!

Note: I usually bake extra and freeze in a large Ziploc freezer bag. Reheat in the microwave or oven.

I tired these and used my own homemade taco seasoning. The flavor was great and the high heat does the trick. You can find the taco seasoning recipe(s) on the Internet and it’s so much better tasting because you control the ingredients and the salt.

Shari, yes they do! I think it is the combination of baking at a higher heat and the cooking spray that does it. :)

Delicious and super easy!! They definitely get cruncy in the oven and taste just as good if not better the next day!
