Description

Breaded and baked chicken Parmesan sandwiches with no eggs!

Ingredients

  • 1 teaspoon Fresh Rosemary, Chopped
  • 1 teaspoon Fresh Thyme, Chopped
  • 1 teaspoon Fresh Parsley, Chopped
  • ½ teaspoons Kosher Salt
  • ½ teaspoons Black Pepper
  • ½ cups Panko Breadcrumbs
  • 3 Tablespoons Grated Parmesan Cheese
  • 8 whole Chicken Breast Tenders
  • 1 Tablespoon Olive Oil
  • ¾ cups Marinara Sauce
  • 1 cup Shredded Mozzarella Cheese
  • 4 whole Sandwich Rolls
  • Fresh Basil (optional)

Preparation

Preheat oven to 450ºF and line a baking sheet with parchment paper or a baking mat.

Place rosemary, thyme, parsley, salt, pepper, panko breadcrumbs, and Parmesan cheese in a shallow dish and stir to combine.

Brush both sides of a chicken tender with olive oil, or lightly coat with olive oil spray. Dredge chicken in breadcrumb mixture and place on lined baking sheet. Repeat with remaining chicken.

Bake chicken 7-8 minutes, flip, and bake another 7-8 minutes. Remove from oven. Top with about a tablespoon (or to taste) of marinara. Evenly distribute mozzarella cheese over chicken. Return chicken to the oven and bake 5 more minutes, or until cheese is melted and bubbling.

To make sandwiches, place 2 tenders on bottom half of a roll. Top with fresh basil leaves if desired, and top with other half of roll.
