Description

If we really do eat with our eyes first, you’ll be hard pressed to find anything more colorful and beautiful than this.

Ingredients

  • 2 whole Everything Bagels, Halved And Toasted
  • 1 whole Avocado
  • ½ whole Lemon, Juiced, Plus More To Serve
  • 1 piece Smoked Salmon
  • 2 slices (thin) Red Onion
  • 2 Tablespoons Capers, Rinsed And Drained
  • 2 pinches Salt And Freshly Cracked Pepper

Preparation

1. While the bagels are toasting, mash avocado with the lemon juice in a small bowl. Season to taste.
2. Schmear each bagel half with avocado spread, then top with smoked salmon, red onion and capers. (I like eating mine open-faced.) Finish with a squeeze of fresh lemon and a twist or two of freshly cracked black pepper.

This is a favorite of mine, but why rinse the capers? I’ve always thought of this combo as typical Cali/JAP food.

All I can say is…”this is food of the Gods!” If I had to pick my last meal, it would be lox & cream cheese on an everything bagel. Love it!

This is to die for. I had a brunch for 10 yesterday and this was a huge hit. The advocado with the smoked salmon was perfect. I’ll definitely keep this on the the must have list. It was so amazingly simple to prepare, gorgeouse to look at and tasted even better. I could have eaten nothing but this and would have been perfectly happy. Now I want to go home and eat some more!! Give it a try, you won’t be disappointed. Oh, I used store bought guacamole from Costco, it was just wonderful.
