Description

Meatloaf meets BACON – need I say more?

Ingredients

  • 1 pound Ground Pork
  • 3 Tablespoons Sweet Baby Ray's Honey BBQ Sauce Plus Extra For Basting
  • 1 teaspoon Granulated Garlic
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Onion Flakes
  • ½ teaspoons Ground Pepper
  • ½ cups Rosemary Foccacia Breadcrumbs *I Make My Own*
  • 13 slices Thick Cut Bacon, Cut In Half (you'll Need 25 Half Slices Total)

Preparation

In a bowl add the all of the ingredients (except bacon) and mix by hand.

Cut your bacon in half. Lay out 4 strips lengthwise and weave 1 strip in the middle to ensure everything holds together well – you wouldn’t want your meat to fall out, it wouldn’t be a bundle then!

Next, grab a fistful of the meat mixture and form it into a log in the middle of the bacon.

Roll, and as you roll, wrap the bacon around it to form a long, uniform package. Place on a rack over a baking tray. Repeat with the remaining bacon and meat mixture.

Brush some Sweet Baby Ray’s Honey BBQ sauce over top and place in a preheated oven (375F). Bake for 45 minutes. Half way through the cook time, baste again with BBQ sauce.

A few more minutes and this will be passing your drooling lips and into your welcoming stomach!
Once removed from the oven, let rest 10 minutes

Make sure you serve this with lots of veggies so you don’t feel bad for eating 2 bundles!

I cooked them on a rack – perhaps it wasn’t high enough? I’m assuming you usually don’t have the soggy bacon problem?

Laura, glad you adapted the recipe to suit your preferences – I too like to use ground chicken but I always enjoy pork wrapped pork ;)
Did you place the bundles on a rack or straight onto the baking sheet?

I liked these. I used lean ground chicken instead of pork, and I would lessen the amount of thyme next time. I ended up cranking up the heat to 450 and leaving it in for another 5 minutes in an attempt to crisp the bacon – unfortunately the underside remained quite fatty and soft. I would turn them over 1/2 way next time – and possibly even leave out the basting and broil a little to get the bacon really nice – then just slather in sauce at the very end. All in all i liked the idea of this, and will make again! thank you :)
