Description

This is one of my go-to meals for summer, quick, easy and delicious!

Ingredients

  • 18 slices Bread, White Or Wheat
  • ¼ cups Butter, Softened
  • 6 slices American Cheese
  • 6 slices Provolone Or Swiss Cheese
  • 2 whole Avocados, Peeled, Cored, And Thinly Sliced
  • 2 teaspoons Lemon Juice
  • 2 teaspoons Salt
  • 1 teaspoon Fresh Ground Pepper
  • 2 teaspoons Granulated Garlic
  • 6 Tablespoons Mayonnaise
  • 1 pound Bacon, Sliced In Half, Cooked And Drained
  • 1-½ cup Shredded Lettuce

Preparation

Preheat a griddle or non-stick skillet. Butter 12 slices of bread on one side. Place 6 slices of bread, butter side down, on the griddle; top with one slice each of American and provolone cheese. Top with the other 6 buttered slices of bread (butter side out).

Meanwhile, lightly toast 6 other slices in the toaster. Flip grilled cheese sandwiches when they are lightly browned and allow to cook on the other side. Remove from the griddle when lightly browned and cheese is melted.

Sprinkle avocado slices with lemon juice, salt, pepper and garlic.

Sandwich assembly:
Spread the outside of grilled cheese on one side with mayo. Layer cooked bacon slices, sliced avocado, lettuce and a slice of toast that has been spread with mayo. Cut in half diagonally and serve.

I reduced the amount of salt called for in the recipe just as a matter of personal preference, but these are really good! Even my avocado-hating husband enjoyed these.

My whole family loved these. I was a little confused with the recipe until I realized each sandwich is made with 3 slices of bread. This made the sandwich very filling. We will definitely be having more of these in the future!
