Description

A great sandwich loaded with creamy avocado, melted brie cheese, and caramelized onions. This is a real treat.

Ingredients

  • 2 slices (thick) French Style Country Bread
  • 1 Tablespoon Unsalted Butter
  • ½ cups Brie Cheese, Rind Removed
  • ½ Tablespoons Canola Oil
  • ½ whole Small Onion, Thinly Sliced
  • 1 clove Garlic
  • 2 Tablespoons Herbed Mayonnaise (optional)
  • 1 whole Avocado, Mashed
  • Salt To Taste
  • 1 leaf Romaine Lettuce, Torn

Preparation

Preheat oven to 350ºF.

Lightly butter French bread and place onto baking sheet in oven. You will want to lightly toast bread, not only for texture, but it also will help hold up to the softness of mashed avocado and brie.

While bread toasts, add brie to a small baking dish and let it cook in oven, just until melted.

To a small skillet, add canola oil and sliced onions. Cook on medium heat for about 15 minutes, just until onions soften and turn color.

When toast is ready, rub both slices with garlic clove. Place herbed mayonnaise on top, then smear avocado on bread. Sprinkle with salt. Top with melted brie cheese, cooked onions, and then lettuce.

Slice in half, and serve.
