Description

My Auntie Diane has been making these pork chops for years and we absolutely love them, they are simple and quick oven baked BBQ pork chops. This recipe makes a ton of sauce and it tastes great over rice.

Ingredients

  • 2 Tablespoons Oil
  • 6  Pork Chops
  • 1  Onion, Chopped
  • 3 cloves Cloves, Minced
  • ½ cups White Vinegar
  • 1 can Tomato Paste (5.5 Ounces)
  • ¼ cups Brown Sugar
  • 1 Tablespoon Brown Sugar
  • ¼ cups Water
  • 3 Tablespoons Worcestershire Sauce
  • 1 teaspoon Dry Mustard
  • 1 teaspoon Chili Powder
  • ¼ teaspoons Each, Salt And Pepper

Preparation

Heat oven to 350 degrees F.

Heat oil in a large frying pan over medium heat. Brown pork chops, and once both sides are browned, remove them to a casserole dish. Add onions into the frying pan, cook until soft over medium heat. Add garlic, cook 1 minute longer. Add the remaining ingredients. Bring to a boil, reduce heat and simmer 5 minutes.

Pour sauce over pork chops and bake 45-60 minutes.

I made these last night, and the only thing I did differently was to cover the baking dish with foil. I had plenty of sauce without worrying about losing any sauce in the baking process.

This dish was simple and hearty. I can easily see doubling the recipe and making two big dishes of this for a larger crowd. The only suggestion I have is that next time I will trim the fat off the chops (I don’t like an accidental mouthful of fat, and it gets obscured by the sauce). It was awesome served with garlic smashed potatoes, a perfect compliment to the tangy sauce.
