Description

Pan grilled salmon and asparagus drizzled with a soy-sauce-based sauce and sesame seeds.

Ingredients

  • 2 pieces Salmon (wild Caught, The Size Of A Deck Of Cards)
  • 1 package (about 1 Pound Package) Fresh Asparagus
  • 1 cup Soy Sauce
  • 1 Tablespoon Rice Wine Vinegar
  • 2 Tablespoons Ginger (fresh Grated Prefered)
  • 2 Tablespoons Garlic Powder
  • 1 teaspoon Chili Powder (optional, For Spice)
  • 2 pinches Sesame Seeds
  • 2 Tablespoons Olive Oil

Preparation

1. Prepare asparagus how you like it best (I prefer them steamed). Cook it until is just almost done. Set aside.

2. Mix soy sauce, rice wine vinegar, ginger, garlic (and an optional teaspoon of chili powder if you like it a little spicy). Set aside.

3. Start to heat pan on medium heat. While it is heating, take your fish and pat it completely dry on the outside with absolutely no oil nor moisture on the flesh.

4. Add oil to the pan and allow to heat until it, as my daughter says, spits a drop of water back at you.

5. Lay fish in the pan and turn the heat up to the lower part of medium high.

6. Cook for approximately 2 minutes covered, or more if it is a thicker piece. You want it about halfway cooked.

7. Turn the fish over and pour the soy sauce mixture over the fish and re-cover. Allow to cook for about 2 more minutes.

8. Remove fish and set aside. Sprinkle with sesame seeds.

9. Turn heat down to medium and allow soy sauce to cook down just a little.

10. Add asparagus and toss until completely coated and heated through.

Can be served over or with pasta, couscous, or rice on the side. We just ate it in a bowl as-is with nothing else. It is that yummy.
