Description

Divine! Cooked in the oven, in an apricot sauce, then served over basmati rice. Leftovers make a wonderful stir fry the next day.

Ingredients

  • 1 package Chicken Thighs, Large Tray
  • 1 cup Apricot Jam
  • ¼ cups Honey
  • 3 Tablespoons Soy Sauce
  • ¼ cups Vinegar
  • 2 cloves Minced Garlic (or Its Equivalent In Garlic Powder)
  • ½ teaspoons Pepper

Preparation

Remove skin and fat from a tray of chicken thighs. Place chicken in a 9×13 baking dish.

Heat remaining ingredients in a saucepan until combined. Pour over the chicken.

Cover with foil and bake for 45 minutes at 350 degrees. Remove foil, turn chicken over, and bake for 30 minutes more.

Serve with white or brown basmati rice, spooning apricot sauce over the rice. Be sure to saute the rice in butter before cooking to bring out its nutty flavor.

Perfect for four people, with leftovers for stir fry the next day.

The next day, remove chicken from bones, saute veggies, and add remaining rice and sauce—instant stir fry!

I made this for dinner last night and it was delicious. My husband and I both really enjoyed it. Very flavorful but not over the top. The chicken was tender and juicy. The sauce was wonderful over the rice.
