Description

Looking for a lighter way to incorporate pumpkin into your diet? Try these light and refreshing apple and chicken tacos with pumpkin mayo!

Ingredients

  • 1 cup Pumpkin Puree
  • ¾ cups Mayonnaise
  • ½ teaspoons Salt
  • ½ teaspoons Black Pepper
  • 1 teaspoon Chili Powder
  • ½ teaspoons Ground Cumin
  • ½ teaspoons Pumpkin Pie Spice
  • 2 Tablespoons Vegetable Oil
  • 1 pound Boneless Skinless Chicken Breast
  • 1 teaspoon Ground Cayenne Pepper
  • 8 whole Flour Tortillas
  • 2 cups Baby Arugula
  • 2 whole Apples, Cored And Diced
  • 1 cup Feta Cheese

Preparation

In the bowl of your food processor, combine the pumpkin puree, mayo, salt, pepper, chili powder, cumin and pumpkin pie spice. Pulse until smooth then set aside.

In a large saucepan, heat the vegetable oil over medium heat. Season your chicken breast with salt and pepper to taste and the ground cayenne pepper. Place your chicken breasts into the hot pan and cook for 6-8 minutes on each side or until cooked through. Remove from pan and set aside to cool for just a couple of minutes. Thinly slice the chicken once it is cool enough to handle.

Prepare your tacos by layering a tablespoon of pumpkin mayo onto a flour tortilla. Top with arugula, apple, chicken and feta. Serve warm and enjoy!

I hadn’t finished serving everyone before one kid was asking for seconds! I cut the chicken before cooking and sprinkled on some adobo seasoning, but the real hit was the sauce – and we have some left for sandwiches or whatever.
