Description

Delicate angel hair pasta smothered with shrimp in a white wine sauce with fresh Roma tomatoes, caper and olives.

Ingredients

  • 2 teaspoons Olive Oil
  • 1 Tablespoon Butter
  • ½ cups White Wine
  • 1 Tablespoon Tomato Paste
  • 3 cloves Garlic, Pressed
  • 1 pound Fresh Small Shrimp Peeled And Deveined
  • 1 whole Roma Tomato, Diced
  • ½ jars Capers (3 Ounce Jar)
  • ½ cans (6 Oz. Size) Whole Black Olives Or Olives Of Your Choice
  • 6 leaves Fresh Basil & Oregano
  • 1 box Angel Hair Pasta (12-16 Ounce Box)

Preparation

If you are peeling and deveining the shrimp yourself the prep time will be approximately 35 minutes otherwise it should only be around 10 minutes.

While the pasta is cooking; in a medium sauce pan combine the olive oil and the butter. Heat for about 3 minutes or just until the butter is melted. Be careful not to brown or burn the butter.

When the butter is melted add the wine. Simmer for about 7 minutes. As always when cooking with wine taste before you add any other ingredients in order to make sure that there was enough butter to cut the acid in the wine tannins. If it still has a bite to it add more butter.

Once the wine and butter are to your liking add the tomato paste and pressed garlic until well blended -approximately 2 minutes.

Now toss in those lovely shrimp, diced tomato, capers and whole black olives. Cook until all of the shrimp are pink. This will take about 6-8 minutes. Be careful not to over cook the shrimp. They should be tender and give a little when you push down on them, not overly firm.

Serve over the pasta and enjoy!
