Description

Here they are! Red Velvet Whoopie Pies—just in time for Valentine’s Day. Perfect for all those sweeties our lives!

Ingredients

  • 1 box (18.25 Oz. Box) Red Velvet Cake Mix
  • ½ cups Vegetable Oil
  • 2 Tablespoons Water
  • 2 whole Eggs
  • 1 stick Soft Butter
  • 1 cup Powdered Sugar
  • 2 cups Marshmallow Cream
  • 1 teaspoon Vanilla

Preparation

The cookies:
Combine dry cake mix with oil, water, and eggs. Use a 2-oz. cookie dough scoop to drop scoops of dough onto ungreased cookie sheets 2 inches apart. Bake at 325 degrees for about 13 minutes. Cookies should be firm enough to handle, but not overdone and crispy. Cool on wire racks. Then make sandwiches with filling.

The filling:
Beat together butter and powdered sugar. Beat in the marshmallow cream and vanilla, blending until smooth. Spoon 1-2 tablespoons of filling onto the bottom of a cooled cookie. Press the bottom of another cookie on top of the filling to make a sandwich. Repeat with remaining cookies and filling. Store pies between layers of waxed paper in an airtight container and refrigerate for up to 2 days.

Variation: use Devil’s Food Cake mix!

These were awesome. I have made these for Valentine’s Day and Christmas. Every loves them and think I spent hours baking. One suggestion I have is making the filling ahead of time and placing it in the fridge while the pies are baking. I found this keeps the filling from oozing out of the pies.

I made a batch and took them to the clinic where I work, now they all think I’m an amazing baker. I couldn’t believe how easy these were to make. I bought a cookie scoop, which really helped me keep the cookies uniform in size. Thanks for making me look good!

While these are very tasty, they aren’t a “true” whoopie pie…more like a cookie sandwich. Came out like a true cookie, where whoopie pies are more like a cake. Very good though!

I gave this a 5 “glove” rating because I don’t know if I messed up or what. They’re good and very easy to make. My problem was mine are huge. So huge there was no way I was getting 18 pies from one batch. I had to go buy another cake mix and could only put 1 TBS of filling in them. I bought a 2-oz scoop just for this recipe. At first I thought I messed up and bought a bigger one, but it’s definetly a 2-oz.I would have loved more filling in them because they are pretty flat. But like I said, they are good. Any solutions?

These were FABULOUS! They look like I bought them from a bakery! I did find the filling to be the tiniest bit thin, but once they went in the refrigerator and came back out the next day, they were perfect! I took them to a potluck and had so many requests for the recipe, I cannot believe they were so easy to make!

MMMMM Good.
These were awesome. I have made these for Christmas and Valentines Day. I also tried with devil’s food cake mix and they are equally just as yummy.

These were really delicious, but the filling was definitely runny and didn’t stay put! :( But they still got eaten and enjoyed! Any tips on how to make the filling less runny?
