Super Simple Shortbread Cookies

Description

This is a family recipe and it’s very easy, but also very yummy! You can use this in a number of ways, but one of my favorites is to add some whipped topping and fruit! They are perfectly yummy with coffee and tea, or with a big glass of milk!

Ingredients

  • 1 stick Butter, Softened (not Melted)
  • ¾ cups Super Fine Sugar
  • 1 teaspoon Vanilla
  • 2 cups Sifted Flour (or Cake Flour)
  • 1 pinch Sugar

Preparation

1. Preheat oven to 400 F. Mix together all ingredients (except the extra pinch of sugar) in the bowl of a stand mixer. Mix until the dough comes together.
2. Roll out the dough on a lightly floured work surface using a rolling pin. Roll it to about 1/4 to 1/8 inch thickness.
3. Use cookie cutters or cut however you’d like. Place cookies on a cookie sheet that you’ve lined with parchment paper or a Silpat.
4. Sprinkle a bit of sugar on top of all of the cookies.
5. Bake for 10 minutes at 400 F. Keep an eye on the time because depending on the thickness of the cookies and your oven it may need more or less time.
6. Remove cookies from the oven and immediately transfer them to wire racks to cool. I am pretty bad about doing this step, but if you don’t transfer them the bottoms will be too burned!

Amazing recipe as soon as you add 1 egg. If you dont it is super crumbly maybe it was my error but this is what i did to fix it. I also just rolled into a walnut sized ball and cooked for 11 to 12 minutes. I simply ran out of time to roll and cut :D
