Description

These cookies contain three of my favorite things: pumpkin, chocolate chips, and oatmeal. They’re perfect dipped in a glass of cold milk. And if you’re like me, you’ll eat way too much of the dough!

Ingredients

  • 1 cup Butter
  • 1 cup White Sugar
  • 1 cup Brown Sugar
  • 1 cup Pure Pumpkin
  • 2 whole Eggs
  • 2 teaspoons Baking Soda
  • 1 teaspoon Cinnamon
  • 1 teaspoon Pure Vanilla
  • 3 cups Flour
  • 1 cup Quick Oats
  • 1 cup Chocolate Chips

Preparation

Preheat oven to 325 degrees F.

Mix ingredients in order given.

Drop by tablespoons on an ungreased cookie sheet.

Bake for 13-15 minutes and remove from oven. (Cookies won’t look completely done. It also depends on how well done you like your cookies. I bake mine for 13 minutes.) Let them sit on cookie sheet for 1-2 minutes before removing onto a cooling rack.

Dunk in milk if that’s your thing and enjoy!

Note: I usually get at least four dozen out of one batch of dough.

FANTASTIC!!!
I am also having a hard time not underbaking them. 3 batches in and out of oven and all three are underbaked. I will continue to try until I get it right! Very easy recipe to follo!

just made these tonight, and they’re awesome! i think i slightly underbaked them, so i’ll keep that in mind for next time.

These cookies weren’t very good. They took a long time to cook fully (I took them out after about 15 minutes and ended up putting them back in for another 5 or 10). The texture was weird, they didn’t taste much like pumpkin, and the only thing that really saved them was having chocolate chips. A friend noted that if you thought of them as chocolate-chip pumpkin bread, they were good. But as cookies, they really weren’t.

I thought these were very good. The recipe is simple to follow and the cookies turned out very well. I didn’t have trouble with under or over baking them, just kept an eye on them though. I did think they could have been sweeter, but they were certainly a hit with my co-workers and hubby.

Oddly, I wasn’t that happy with these… they didn’t seem sweet enough to me, and there was an odd soapiness from the baking soda, I think… maybe next time I’ll up the sugar, and use baking powder. Maybe I’m just being hormonal :-p

I made these last night and went with 1/2 cup semi sweet chocolate chips and 1/2 cup skor bits and they are awesome! everyone loves them and are definitely on my list to make again

Yummy!! I didn’t have cinnamon for some odd reason, so I substituted 1/2 tsp nutmeg and a 1/2 tsp of cloves, but other than that, I followed the recipe to a T. I also noticed the baking for 13 mins was to short for me, so I went 14-15 and they were just perfect! I’m bringing them to a church party tonight, and I’m going to have a hard time not eating them before!
