This easy shortbread takes only a couple minutes to whip together and is buttery and moist. It gets better when you fill it with jam or chocolate! Yum! This is one of my family’s tried and true recipes that never gets old! I grew up making and eating this stuff. It’s truly delicious!
Preheat oven to 325 degrees.
In a large bowl, mix butter, sugar, vanilla and flour until combined. It will be crumbly but will stay together when formed into shapes.
Divide dough into 4 equal balls. Form each ball into a log the length of the cookie sheet with a depression in the centre. They should be long and skinny, about 1-1 1/2 inchs wide.
Bake 12-15 minutes. When warm, fill with desired fillings (jam or chocolate).
Mix powdered sugar and milk together to create a runny icing. You may need more milk to get a good consistency. Using a spoon, drizzle icing over filled shortbread logs.
Cut on the diagonal into pieces once cooled.
