Description

Easy, delicious, super simple and old-fashioned! Love these sweet little things!

Ingredients

  • ½ cups Butter, Softened
  • ¾ cups Granulated Sugar
  • ¼ cups Packed Brown Sugar
  • 1 whole Egg
  • 1 teaspoon Vanilla
  • 1-¼ cup All-purpose Flour
  • ¾ cups Rolled Oats
  • ⅛ teaspoons Salt
  • ½ teaspoons Baking Powder
  • ⅛ teaspoons Baking Soda
  • ½ teaspoons Cinnamon
  • ½ cups White Chocolate Chunks
  • ½ cubes Fresh Blueberries

Preparation

Preheat oven to 350ºF. Line baking sheet with parchment paper or silicone baking mat and set aside. In a large bowl, cream butter and sugars together. Stir in egg and vanilla. Whip until light and fluffy.

Stir in all dry ingredients until just incorporated. Carefully stir in chocolate chunks and blueberries.

Scoop onto baking sheet and press down lightly to flatten. Bake 7-8 minutes or until the edges are golden brown and the centers are soft, but not shiny. Cool 5 minutes on baking sheet and then transfer to cooling rack.

Serve or store in airtight container for up to 4 days.

These were great, I’d describe them as a really delicious, cinnamon-spiked sugar cookie that just happens to be stuffed with oatmeal, blueberries and white chocolate. I did have to bake them longer than 7 minutes (maybe 9-10 minutes), but I think I may have made the cookies a bit larger than Lauren ;-).
