I swear to you this tastes just like apple streusel. If you don’t tell them, you’ll NEVER know it’s zucchini. Trust me. I have fooled quite a few, including my vegetable-hating husband. It’s delicious and best served warm with ice cream. I put it in the Fruit Desserts category because that’s what it tastes like! They don’t make a category for vegetable desserts.

I have served this zucchini crisp to people & they think I’m joking when I tell them it was made from zucchini. They are just SURE it is apple crisp. Really! It’s true! I took it to the ice cream social at church last weekend & didn’t tell them until the next day that my “apple crisp surprise” was really zucchini crisp. One lady said, “No way! It even looks like apples!”
It also smells so wonderful while it is baking.
