A Very Blueberry Crisp

Description

This crisp! This crisp!? What can I say about this crisp? It’s sweet but not too sweet and there’s a little bite of tang from the lemon zest, without overdoing it. I’d say this is perfect if you bought a really beautiful batch of blueberries and really want to let their flavor shine!

Ingredients

  • 4 cups Fresh Blueberries
  • ½ whole Lemon
  • ¾ cups Sugar, Divided
  • 1 Tablespoon Cornstarch
  • 1 cup Flour
  • ½ cups Light Brown Sugar, Firmly Packed
  • ½ teaspoons Ground Cinnamon
  • ½ teaspoons Ground Nutmeg
  • ¼ teaspoons Salt
  • 1 stick Butter

Preparation

Preheat oven to 375 F.

Wash and thoroughly dry the blueberries. Dump them into a small(ish) baking dish (I think mine was an 8″ square). Zest and juice the lemon and add to the blueberries. Next, measure 1/4 cup of sugar and the corn starch and mix into the blueberries. Set aside while you prepare the crisp topping.

In a mixing bowl, combine flour, remaining 1/2 cup sugar, brown sugar, cinnamon, nutmeg and salt. Mix it all up until the ingredients are evenly distributed. Next chop up the butter and throw it in the bowl. Mash it around until it submits and becomes evenly mixed throughout.

Spread the mixture over the berries and bake in the oven with tin foil on top for 15 minutes. Remove the tin foil and bake for another 25 minutes or until the top is crispy enough for your tastes.

Enjoy and sigh contentedly because that’s what summer and life and food is all about.
