For those familiar with the West Coast chain “El Pollo Loco,” this marinade comes pretty close. Enjoy this with chicken. It’s the best! This marinade makes enough for 4 chicken breasts, or a pound and a half or so. Easily doubled for larger quanties of poultry.

A powdered Cajun seasoning mix/rub with plenty of paprika to created the ‘blackened’ look when it’s cooked on high heat. Convert the tablespoons to any measurement (larger or smaller), and it can be scaled up or down to make any quantity!
