I had the pleasure of assisting a chef who taught a great steak cooking class. This steak sauce is one of the recipes he shared with the class and he kindly gave me permission to share it with all of you. Note: this sauce can also be used as a 10-minute marinade.
If you have not had the pleasure of smothering your favorite eggs or veggies in Hollandaise Sauce, you don’t know what you’re missing! It’s nothing but butter, eggs and lemon. Okay, so it doesn’t fall into the “healthy” category, but it makes for a great special occasion and/or just sprucing up your favorite veggies.
For those familiar with the West Coast chain “El Pollo Loco,” this marinade comes pretty close. Enjoy this with chicken. It’s the best! This marinade makes enough for 4 chicken breasts, or a pound and a half or so. Easily doubled for larger quanties of poultry.
A powdered Cajun seasoning mix/rub with plenty of paprika to created the ‘blackened’ look when it’s cooked on high heat. Convert the tablespoons to any measurement (larger or smaller), and it can be scaled up or down to make any quantity!
