Description

These oatmeal breakfast bars are healthy, filling and absolutely delicious! With peanut butter, banana, honey and oatmeal, these yummy bars will keep you powered for hours. They are easy to make, can be frozen for up to four months, and are great for snacks too.

Ingredients

  • 2 cups Old Fashioned Rolled Oats
  • 1 cup Whole Wheat Flour
  • 2 teaspoons Ground Cinnamon
  • 1 teaspoon Baking Powder
  • ¼ teaspoons Kosher Salt
  • 1-½ cup Milk
  • ½ cups Unsweetened Applesauce
  • 1 whole Large Egg
  • 3 Tablespoons Honey
  • 2 Tablespoons Peanut Butter
  • 1 teaspoon Vanilla Extract
  • ½ whole Large Banana, Diced

Preparation

Place rack in the center of your oven then preheat oven to 375 F. Lightly coat an 8×8 inch square pan with cooking spray. Set aside.

In a medium bowl, stir together the oats, whole wheat flour, cinnamon, baking powder and salt. In a separate large bowl, combine the milk, applesauce, egg, honey, peanut butter and vanilla.

Pour the dry ingredients into the wet mixture and stir to combine . The batter will be very wet. Fold in the diced banana, then pour into the prepared baking pan and smooth the top.

Bake for 35 minutes or until thickened and golden and a toothpick inserted in the center comes out clean. Cool, cut into bars, and serve.

I made these tonight and think they are pretty yummy for a breakfast bar. They are filling although I found that they needed a tad more sweetness so I melted just a few dark chocolate chips on top. Overall, a good, healthy breakfast bar!
