Because love is in the air, and everyone knows that chocolate is the universal language of love. Oui?

I have to confess that today’s theme was both incredibly enjoyable and difficult at the same time. Enjoyable because I spent six hours looking at all things chocolate, with emphasis on the word “chocolate.” And difficult because I spent six hours looking at all things chocolate, with emphasis on the words “six hours.” Sometimes, things just have a way of balancing themselves out.

It’s no surprise that chocolate is one of the most popular ingredients here at Tasty Kitchen. It’s not only in the usual dessert places, but you’ll also find it in more unconventional dishes, like a Guiness Beef Stew from theparsleythief. We even have a recipe here for Chocolate Hummus posted by incrediblecrunchyflavor.

(I know you don’t believe me, so I’ll wait a few minutes while you go check those links.)

It was quite a challenge to narrow down the number of recipes to include for this post, because there are just so many possible choices. Whether you’re planning something fancy, jazzing up an unassuming cupcake, or assembling a special gift box of bite-sized delights, there’s a good chance you’ll find what you’re looking for in here. Let’s look at some of the goodies we have, shall we?

First, let’s go fancy. Maybe you’re looking for something elegant, something that fits nicely in an intimate setting. Here are a few suggestions.

Meet Maria (and Josh!)

Tasty Kitchen Blog: Meet Maria Lichty of Two Peas and Their Pod.

 
Today, it’s a special two-fer at the Tasty Kitchen Blog: not only will we get to meet Maria of TwoPeasAndTheirPod, but we’ll also be meeting her husband Josh, the other half of “The Cooking Couple.” Aren’t they a cute pair?

Maria Lichty is an Illinois native who moved to Utah for college. There, she met Josh, and what started as a solid friendship eventually led to their beautiful June wedding in 2008. You can tell from reading their blog Two Peas and Their Pod that they share a passion for food, and they are obviously a great team in the kitchen. They love to cook and bake together, and Josh’s skill with bread doughs, pizza crusts, pasta, etc. means Maria gets to call him her “dough boy.” (He does the dishes too, folks. What a guy!)

Maria is currently a health educator for Healthy Utah, the worksite wellness program for the state, and she and Josh enjoy many outdoor activities together. So it comes as no surprise that they try to keep things healthy. But Maria is quick to point out that they do leave room for sweet treats, as evidenced by the 70+ cookie recipes on their blog. She followed that up with an “oops!” but I think many will agree that “yay!” might be more appropriate. Especially since the Chocolate Peppermint Crunch Cookies in the photo above are only a hint of how good her cookie creations are.

Maria and Josh entered the world of food blogging almost by accident. Josh had his own blog when they first started dating, writing mostly about his outdoor adventures, family photos, and political views. But since they spent so much time in the kitchen together, Maria began sharing some of their recipes and photos online. Encouraged by friends and family, she continued posting more recipes and photos, until they eventually found themselves with a full-time food blog. Which is a wonderful thing for all of us, because not only do they share great recipes with everyone, but they also offer glimpses of their beautiful family, and the undeniably deep and unselfish love that they all have for one other. (For example, did you know that her father personally prepared, by hand, 400 tiny tarts for their wedding?)

So, before we ask Maria some questions, let’s take a quick look at some of the recipes that both she and Josh have shared with us here at Tasty Kitchen. They really have a knack for making healthy look sinfully good.

Q: What do you enjoy most about cooking?
A: My creative juices come alive in the kitchen. I also love sharing food and recipes with others. Food brings people together in the most enjoyable way.

 
Q: Any favorite chefs or food celebrities? Who inspires you?
A: My dad inspires me in and out of the kitchen. He taught me how to cook and bake when I was a little girl. There was always something tasty cooking or baking in our kitchen. My friends used to come over to see what Parry was whipping up next. My dad is famous for his cinnamon rolls. They are the best!

 
Q: If you had to eat something right now, and had only 3 minutes to get it ready, what would it be?
A: Cereal. I try to avoid packaged/processed foods, but we both love cereal. We might even be addicted. I eat oatmeal for breakfast everyday, but I do enjoy cereal for a snack or dessert. We stock up when it is on sale—we may or may not have over 75 boxes right now.

 
Q: What ingredient/kitchen technique/method gives you the most trouble?
A: Macarons! Josh can’t eat them because he is allergic to nuts, but he was obsessed with mastering them. He even made his own powdered sugar to try and get them right. We finally got them down and I made some for our wedding. Yes, I did all of the baking for our wedding, but that is another story. It was so much fun.

 
Q: What is your favorite kitchen tool?
A: I love my KitchenAid Mixer. She is my best friend in the kitchen, besides Josh.

 
Q: What food item do you always make at home and never buy at the store anymore?
A: Yogurt. I started making my own yogurt about 6 months ago. I love it! It is easy, healthy, and a lot cheaper than buying it from the store.

Compound Butter

One of my culinary shortcuts is called compound butter. Well, truthfully, just plain ‘ol butter is my shortcut to a better dish, but I want to show you how easy it is to make some fancy schmancy butter with some spices and fresh herbs.

Compound butter is just butter + stuff mixed in. Though calling it “compound butter” vs. just “butter + stuff mixed in” means you have to pay $3 more for it at the store. What a marketing gimmick! Seriously, though, compound butter is just flavored butter, and the possibilities are endless. Some of my favorites are:

butter + honey + cinnamon for toast
butter + chopped cranberries + orange zest for muffins
butter + garlic + basil for vegetables, shrimp (anything really)

All you have to do is mix softened butter with your choice of herbs/spices/sugars and you’re done. But I’ve found that shaping the compound butter into logs makes for easy storage (for the refrigerator or freezer), simple dividing, and an attractive little gift.

Here I’m making some garlic-parsley butter for garlic bread. Take a stick of room temperature butter, a tablespoon of finely minced parsley, a garlic clove smushed through a garlic press, and just a generous pinch of salt (only if you’re using unsalted butter).

Grab a piece of parchment paper and lay it on your cutting board. I find that using a slightly damp cutting board helps the parchment stick, so that it doesn’t curl back up and over the butter (it’s a pain in the butt trying to keep that paper flat!).

Okay, now use your hands to roll up that butter. Don’t worry about getting it perfect; I’ll show you a trick in a second.

Here’s my secret weapon: a $1.50 sushi rolling mat. This mat helps me roll the butter into a tight, compact, even-shaped log. Roll the mat up partway.

Then use your hands like above to tug and pull back to tighten the log. My left hand is tugging and tightening the roll and my right hand is pulling in the opposite direction to give the mat tension.

Once you’ve tugged and evened out the log, open up the sushi mat.

Twist the ends of the parchment paper and refrigerate (or freeze).

Once the log has stiffened up, it’s ready to use! If I’m only using a bit of the butter, I like to cut them into “coins.”

Then pull away the paper! You can use this butter to saute vegetables, add to a sauce, slather for garlic bread, top a freshly grilled steak or mix with pasta.

As I mentioned, these rolls make fantastic gifts—just tie a little ribbon on the ends!

Someone told me about a big game going down this weekend. For some, it’s THE biggest game of the year. There are folks who are so hip to the game that they know everything from the point spread to the MVP odds. Some simply watch it for the commercials. Maybe this year, a few will tune in just to see if The Who can still rock it. And few may be wondering what the big deal is about a giant dish that holds soup.

Whatever group you belong to, chances are, you’ll be around a bunch of other people this Super Bowl Sunday, whether it’s at your home or someone else’s home. There’ll be friends, family, loud conversations, and food. Lots of food. Mostly the kind that you can hold in your hand while jumping up from the couch either giving everyone high fives or trying very hard not to throw things at the television.

It’s been known to happen.

If that sounds like your upcoming weekend, we’ve got you covered! There are lots of game day choices here, from dips cold and warm, to all kinds of pizzas, finger foods, different versions of chili … and many of them require minimal preparation, so you can actually enjoy the game with everyone instead of being stuck in the kitchen where the smallest television in the house sits.
