Description

My friend, Cathy, makes a version of this soup and any time I’ve eaten it, my eyes have closed and I’ve sighed with a deep, deep sense of solemnity and peace. It’s a basic creamy tomato soup, but it uses simple pantry ingredients (as well as a couple of fresh ones), and it’s made extra special by the addition of cooking sherry.

Ingredients

  • 6 Tablespoons Melted Butter
  • 1 whole Medium Onion, Diced
  • 1 bottle (46 Oz.) Tomato Juice
  • 2 cans (14 Oz. Cans) Diced Tomatoes
  • 1 Tablespoon (up To 3 Tablespoons) Chicken Base
  • 3 Tablespoons (up To 6 Tablespoons) Sugar
  • 1 pinch Salt
  • Black Pepper To Taste
  • 1 cup Cooking Sherry
  • 1-½ cup Heavy Cream
  • Chopped Fresh Parsley
  • Chopped Fresh Basil

Preparation

Sauté diced onions in butter until translucent. Then add canned tomatoes, tomato juice, chicken base, sugar, pinch of salt, black pepper and stir. Bring to a near boil, then turn off heat. Add in sherry and cream and stir. Add in parsley and basil to taste.

Adjust other seasonings and serve with yummy, crusty bread on a cold blustery, dreary, depressing, rainy, snowy day. Then close your eyes.

Just wondering if anyone has made this using dry sherry instead of cooking sherry? I almost always have dry sherry on hand but I never use cooking sherry anymore. Thoughts? Also has anyone tried cutting some of the heavy cream back and substituting evaporated milk?

Fantastic! Im currently enjoying this soup on a dreary day of Dogwood winter. Sherry scared me a little bit so I only used a half cup, I’ll work my way up one day. Topped it off with some grated parmesan and toasted frenchbread. Just a little bit of heaven. ;)

Back in the 1980s there was a restaurant in Tulsa on Lewis that served the most delicious Sherry Tomato Soup. This sounds like it may be similar. Can’t wait to try it!

I made this for dinner tonight and it is so good. My two year old even loved it!!! I made homemade bread to go with it. I shaved pieces of fresh parmesan on top and it melted perfectly into it and added an extra amount of yum!!

I loved this soup! I did use my immersion blender to make it smooth and used real sherry instead of the cooking kind. I may add it earlier next time to simmer off some of the alcohol.

Awesome soup! I made this last night to go with grilled cheese and it was a huge hit. I had to make a few substitutions but it still turned out wonderful. I didn’t have any tomato juice or chicken base so I used chicken stock and added a bit of Italian tomato paste (The kind in the tube, it’s less bitter than canned tomato paste.) Used my immersion blender to make it a little creamier before I added the cream and sherry. It was delicious. I will definitely be making this again. Thanks Ree for the great recipe.

Wonderful Tomato Soup! I had to improvise a bit – no Tomato Juice – so used 4 small cans of Spicy V-8 and a can of Tomato Sauce. Blended with my immersion blender and served with the proverbial Grilled Cheese Sandwich. A great rainy Sunday night meal that warmed us all up.

I need to make this again soon. I haven’t done it in a while, but I remember it was outstanding. Neither of us are big fans of canned tomato soup, so I wasn’t sure how this would go over, but we loved it. I even took it to a group function and it was quickly slurped down. I did blend it a little with the immersion blender to make it a little smoother.
