A tangy treat for your salad and fresh veggies. Sweet and lively. Refreshing and perfect for that summer salad.
Put chopped strawberries in food processor (or mixer of choice). Mix until smooth and creamy.
Add parsley, basil, dried oregano, dried thyme and garlic. Mix again for just a few seconds.
Add oil and vinegar and mix until oil and vinegar are completely mixed together with the strawberry mixture.
Add salt and pepper to taste if desired.

I’msorry it didn’t go over well. It’s not for everybody. Sometimes things like this are an acquired taste… I would haven’t liked it a couple years agao. Vinaigarette’s also tend be pretty bitter, no matter the sweetness added.

This sounded lovely, and I am so sorry to say this.. but we really did not like it at all. I made it just as directed, tried adding some salt and pepper, and then decided to split it into little bowls adding a little of this or that. Sugar did seem to help, but even then only one person ate it at my dinner party.

I’m soooo glad you like it!!!!! I thought it added a little fruitiness without being too sweet.

Oh thank you thank you thank you! Hubby and I cut out chemicals in our food choices and I had nothing really good to put on my salads. I LOVE vinaigrette and this one is just amazing – great flavor and perfect for my salads. I happened to have some strawberries, zipped this up and today my tastes buds are very contented. AWESOME recipe, thank you!
