Fantastic and healthy recipe! Soba noodles are Japanese buckwheat noodles, but you can use any type of noodles you want – rice noodles make great gluten-free alternatives and regular spaghetti noodles are a substitute in a pinch. This recipe is inspired by inspired by Corrine Trang’s Noodles Every Day.
1. In a bowl, whisk together the sugar, sake, mirin, miso, grated ginger and only 1 tablespoon of the cooking oil.
2. Bring a large pot of water to a boil and cook the noodles according to package directions. Drain, shock under cold water and drain again. Divide noodles into 4 bowls.
3. Heat a frying or grill pan over medium high heat until hot. Brush the asparagus and the sea scallops with oil with the remaining cooking oil. Season with salt and pepper to taste. Grill the asparagus until just tender, about 3-5 minutes total, rolling them around the pan to heat them evenly. Divide asparagus amongst the bowls.
4. Grill the scallops in the same frying pan until cooked through, about 2 minutes per side. Divide scallops among the servings of noodles and spoon some miso glaze in each bowl.

Yum. Made it last night and sprinkled with roasted sesame seeds.
Easy and great. Next time, I’ll risk losing a few scallops on the outside grill instead of using the Jenn-Aire – what a hassle to clean up – took longer than cooking!

Day 2 of my project, Home Eats for 7 Days, brought me to this fabulous recipe. Super easy to put together and full of flavor, this is quite satisfying when you want to eat something substantial without feeling weighed down.

This is the first recipe I’ve made from Tasty Kitchen. Yum! Even my husband, who is a meat & portatoes man, enjoyed it. The only complaint from he & my youngest was that each of the three main ingredients was a different temperature. But that’s par for the course, I can’t seem to get everything on teh table at the same time or temp
