This is not the fried stuff you get at fast food restaurants. This is called Popeye’s Chicken because of the fresh spinach used in the recipe.
Toss chicken in olive oil and seasoning. Sauté chicken until no longer pink. Add mushrooms and cook with the chicken. Add spinach and cook a bit longer, until spinach is wilted. Sprinkle cheese over the chicken, spinach, and mushrooms and put the pan in the oven until the cheese melts. Serve on tortillas with refried beans, guacamole, and salsa.
