Description

Easy, adorable little pies that the family will love! A great finger food for parties too.

Ingredients

  • 1 pound Ground Beef
  • 1 whole Onion, Diced
  • 2 cups Barbeque Sauce
  • ½ whole Red Pepper, Diced
  • ½ cups Sweet Potato, Diced
  • 1 ear Corn On The Cob
  • 2-¼ cups Bisquick
  • ⅔ cups Milk
  • 1 cup Shredded Cheddar Cheese

Preparation

Preheat oven to 450°

Add beef and onion to skillet and cook until done.

Lower heat to simmer and mix in BBQ sauce, red pepper, sweet potato.

Cut the corn off the ear of corn and add that to the mix.

Mix Bisquick and milk in a bowl (or make your own biscuits from scratch).

Drop a spoonful of dough into a muffin tin. Repeat until you’ve used all the dough.

Bake biscuits for about 2 minutes, then take out of the oven and add a large spoonful of the meat mixture to each muffin tin on top of the biscuit dough. Press the spoon down, making a little cup for the mix.

Sprinkle cheese on top and bake for another 8-10 minutes.

These would be really cute stacked on a cupcake stand at a party!

How many pies does this make? Just 4? I can’t wait to make this, I just want to make sure I have enough!

Delicious! I hate it when people write a review and then tell you how they completely changed the recipe, but I did have to make a few alterations. I made this without the red pepper, just because it’s our family’s preference. I used frozen peas instead of corn because I didn’t have any corn readily available. I also diced frozen sweet potato fries because I didn’t have any fresh sweet potatoes. Can you tell that I did this without going to the grocery store? :) I also made my own biscuits, using our family recipe (Mayonnaise Biscuits- 1c Self-rising flour or add 1.5tsp baking powder and .5tsp salt, 2 tbsp sugar, 2 tbsp mayonnaise, and 1.5c milk). Despite all my changes, these are really easy, and super-tasty!

I don’t know what is was about this recipe but my husband and I really didn’t care for it. Maybe it was that I used homemade BBQ sauce vs. store bought but either way the meat and the biscuits didn’t seem to meld together well for us.
