Description

Just boil water, and then use it all up! Raid your fridge and throw it in! These noodles are very versatile.

Ingredients

  • 1 pound Spaghetti, Whole Wheat Spaghetti, Soba Noodles, Quinoa Pasta
  • ½ cups Reduced Sodium Soy Sauce
  • 2 Tablespoons Sesame Oil
  • 2 Tablespoons Canola Oil
  • 2 Tablespoons Rice Wine Vinegar
  • 1-½ teaspoon Red Pepper Flakes
  • 1 bunch Green Onions, Sliced, Divided
  • ¼ cups Cilantro, Chopped
  • 1 whole Red Pepper, Sliced Thin
  • ¼ heads Red Cabbage, Sliced Thin
  • 2 whole Carrots, Shredded With Vegetable Peeler
  • 1-½ cup Shelled Edamame, Cooked
  • ½ cups Toasted Sesame Seeds

Preparation

Cook pasta according to directions. Drain, rinse under cold water.

To make dressing, whisk soy sauce, sesame oil, canola oil, vinegar, crushed red pepper, scallions, and cilantro in a large bowl. Add noodles and vegetables, toss to coat. Top with sesame seeds.

Talk about Super Yum!!! Made this last night and it is gone today! I had to substitute some things for what I had on hand: Linguine, Peas, Regular Soy Sauce and Cole Slaw mix in my salad in addition to the other ingredients. I added 2 tsp brown sugar to help balance out the strength of the soy sauce to the dressing. I took it to work and we ate it for dinner tonight..so fast to put together, such a great burst of flavor! Thank you so much for a recipe I will be adding to my arsenal of favorites!

My husband and I love this – it’s super easy to throw together and has some kick to it with the crushed red pepper. The next day it tastes even better. Thanks!

I LOVE THIS DISH. I’m trying out new dishes for “meatless Mondays” in my house and this fit the bill perfectly. I used whole wheat spaghetti and didn’t quite use a whole pound and just added more veggies. It was really good. Just spicy enough too. I will definitely be adding this to the rotation. My boyfriend took it for lunch today so I’m waiting to see his reaction – but my mind is definitely made up! Thank you for posting this recipe :)

Oh my! Made this tonight for dinner and EVERYONE (even my 5 and 7 year olds) loved it! Was out of edamame, but used green peas.

Added a tablespoon of brown sugar to the dressing just to take the salty edge off. Perfect combination of ingredients for the dressing.

Made this last night, and it was great! Very easy, and delicious. The “freshness” was a nice change for a mid-winter meal.

I think that next time, I’ll add more vegetables, as my noodle: vegetable ratio was a little noodle heavy for me. And, I’ll use a little less red pepper flakes.

But, it is definitely going into regular rotation at my house.
