This was fantastic! I made exactly like the recipe except I only had 1 pound of crawfish and I used shredded pepper jack cheese instead of parmesan. We are always looking for different recipes for crawfish and this has made it to the top of our list! Thank you for sharing, it was delicious.

Thanks for this recipe! I was forced to tweak it a bit, however. I live in Austin, and I think we are still suffering the effects of the oil spill as far as our crawfish supply is concerned. I made the meal with 1.5 lbs of shrimp instead. I also only used 3 tablespoons of butter, a couple of spoonfuls or shrimp, and a 1/2 pint of cream because I wanted the sauce to be slightly healthier and thicker. Despite all of my changes, I managed to still make a delightful meal that would feed an army.

Ooh I have 2 packages of frozen crawfish needing used. I think I might make this tomorrow!!
