Description

This is not your typical chicken salad; it is lighter and fresher than most. But it is also big on flavor. We love it served in a hollowed out baguette cup. It’s perfect for your summertime picnic. And a note to the foodies out there: please don’t turn your nose up at me for using Miracle Whip. It’s really good in here, I promise.

Ingredients

  • 4 cups Cooked, Diced Chicken
  • 1 cup Grated Cheddar Cheese (sharp Is Best)
  • ¼ cups Slivered Almonds
  • 1 cup Chopped Celery
  • ⅓ cups Chopped Green Onions
  • 3 Tablespoons Fresh Squeezed Lemon Juice (juice Of Lemon Usually)
  • 1 jar Pimentos, 2 Oz. Jar
  • ⅓ cups Miracle Whip Dressing
  • 1 teaspoon Salt
  • ½ teaspoons Ground Black Pepper
  • ¼ teaspoons Garlic Salt

Preparation

Mix all the ingredients in a large bowl and chill for several hours before serving. Serve on your favorite bread or roll. Our favorite is a hollowed out baguette cup.

Just a quick recipe tip: I prefer to marinate the chicken in Italian salad dressing and grill it. It adds a lot of flavor to the chicken over other methods.

I love this recipe!! It was a huge hit. I love fruit in my chicken salads..so I added Asian Pear into the mix and it was delicious!! =)

Hahaha you’re so cute. I’ll admit I passed on this because of the miracle whip… but then I read your comment to us “mayo snobs” and now I’m willing to give it a try. Besides, your recipes have never steered me wrong before.

When I make chicken salad I make it with toasted almonds. The toasting adds a really good flavor to the chicken. This is similar to mine, except I do not use celery or pimentoes and I use real mayo.

I must confess to never toasting the almonds in this recipe. This borders on almost blasphemy in my book. I always toast all nuts… with this exception. It probably would make them taste even better… as it always does. And I will try it next time.

As for Mayo… we have Best Foods out here in the West, which is the same as Hellman’s and I won’t use anything else. I also thought I would get brave and try it in this recipe next time and see how it affects the flavor. I’ll be sure to write about it.

This recipe came from my mother in law. I ate it many times at family parties, before ever making it myself. I loved it so much every time she made it that it is one recipe I’ve been reluctant to fool around with.

Just wondering if you toast those slivered almonds? I really like the added “crunch” to my chicken salad. I ususally rough chop some water chestnuts, but will try the almonds.

I will say I am a “Hellman’s real mayo” type cook but will give the Miracle Whip a try!

Made it today & it was very very yummy! I didn’t have almonds, but wanted more crunch so I added red peppers & chopped apples. Also added pickles & pickle juice to round it out. I’ll make this again!
