No one will ever guess the secret ingredient in this ice cream is white beans! A great substitute if you can’t have dairy products.
1. Blend white beans in a food processor until smooth.
2. Cut bananas into small chunks. Add bananas, vanilla, egg yolk and honey to the processor bowl and whir until smooth.
3. Add whole strawberries. Mix until the strawberries are mostly blended, but leave some bigger chunks.
4. Add to an ice cream maker and mix until thickened to soft serve consistency.

We enjoyed this, but we do like beans. I bought the white (navy) canned beans and it still tasted like beans. I added another teaspoon of vanilla to see if that helped…it did a little. Over all, not too bad, we are going to need to experiment with this one!

@mennonitecook, you might try using navy beans instead. Cannellini beans have a stronger flavor than navy beans.

It must make a difference what kind of white bean you use, or maybe it’s whether you make it from canned or dried beans. I tried this using canned cannellini beans, and we definitely could taste the beans.
