Description

Oddly comforting even though it’s incredibly healthy and light. This one is a winner!

Ingredients

  • FOR THE SALAD:
  • 8 cups Dark Salad Greens Such As Arugula Or Spinach
  • 1 whole Granny Smith Apple, Cored And Chopped
  • ¼ cups Chopped, Toasted Walnuts
  • ¼ whole Onion, Thinly Sliced
  • FOR THE DRESSING:
  • ½ whole Lemon, Juiced
  • ¼ cups Olive Oil
  • ¼ cups Chopped, Toasted Walnuts
  • 1 Tablespoon Honey
  • Salt To Taste

Preparation

For the salad, toss all ingredients together in a large bowl and drizzle with the dressing as desired.

For the dressing, combine all ingredients in a small food processor or blender and pulse until smooth. Taste, and add salt to your preference. You can also add more honey or lemon juice to your taste. If the dressing seems thick, add water 1 teaspoon at a time to achieve desired consistency.
