Description

Latkes are typically potato pancakes that are eaten during the Festival of Lights. They are shallow-fried in oil and served with sour cream or applesauce (there is quite a debate as to which is best from what I have read).

Hanukkah begins Tuesday night at sunset—so let’s celebrate with some Veggie Latkes!

Obviously, these are non-traditional but I also enjoy making my own traditions.

Ingredients

  • FOR THE LATKES:
  • 1 head Cauliflower, Cut Into Florets
  • 1 whole Small White Onion, Chopped
  • 1 whole Medium Carrot, Finely Grated
  • 1-½ cup Fresh Baby Spinach Leaves Packed, Chopped
  • 2-½ Tablespoons Flour
  • 2 whole Eggs
  • ¼ teaspoons Garlic Powder
  • ½ teaspoons Salt
  • ¼ teaspoons Fresh Ground Black Pepper
  • FOR THE APPLE YOGURT:
  • 10 ounces, fluid Low Fat Greek Yogurt
  • ½ cups Unsweetened Applesauce
  • 1 teaspoon Honey

Preparation

For the latkes:

Place cauliflower florets into a basket steamer above a pot of boiling water. Cover the pot and steam for about 10 minutes, or until soft. Remove from heat.

Combine cauliflower with all of the other latke ingredients in a large bowl and mix to combine. Spoon 3/4 of the mixture into a food processor and puree until smooth (but not overly-pureed). Place puree back into the bowl and mix it into the remaining 1/4 of the ingredient combination.

Heat a nonstick skillet over medium heat (spray the skillet with cooking spray if desired). Place 2 Tablespoons of the batter into pan (you may cook multiples at the same time, depending on the size of your pan) and press each scoop into a circle. Cook for 3-4 minutes on one side then flip and cook on other side until lightly brown and cake-like. Remove from pan and serve hot. You may place them on a baking sheet in an oven heated to 200 degrees F while the remaining latkes cook.

For the apple yogurt:
Mix all ingredients in a bowl and serve on top of the latkes!

Nutrition Information per 4 latkes with 1/4 cup apple yogurt: 107 calories, 2 g fat, 9 g protein, 12 g carbohydrates, 5 g fiber, 198 mg sodium.
