My version of a veggie Frito Pie.
Heat the olive oil over medium-high heat. Add veggie crumbles onion, garlic, chili powder and cumin and cook over medium-low heat for 5 minutes. Add the beans and tomatoes; bring to a simmer. Cook, stirring occasionally, about 15 minutes. Season with salt and pepper.
Place a handful of Fritos into each bowl, top with chili, pepper jack cheese and cilantro.
