Description

My Nana made this pie for years and the recipe is famous in our home town.

Ingredients

  • 1 whole 9 Inch Baked Pie Crust
  • _____
  • FOR THE CREAM FILLING:
  • 1 package Cool Whip, 8 Ounces
  • 1 package Cream Cheese (8 Ounces), Softened
  • 1 cup Sugar
  • 1 teaspoon Vanilla
  • _____
  • FOR THE GLAZE:
  • 1 cup Strawberries, Mashed
  • 1 cup Sugar
  • 1 Tablespoon Cornstarch (Heaping Tablespoon)
  • ¾ cups Hot Water
  • 1 drop Red Food Coloring
  • 1 pint Strawberries, Hulled And Sliced

Preparation

For the crust, see ‘Nana’s Pie Crust’ here on TastyKitchen – or use your own favorite crust recipe – or buy a store-bought one.

Cream filling:

Mix Cool Whip, cream cheese, sugar, and vanilla with an electric mixer until smooth. Pour into baked pie crust.

Glaze:

In a microwave safe bowl add mashed strawberries, sugar, corn starch and hot water. Cook for 3 minutes and stir. Cook and additional 3 minutes, then add food coloring and stir. (Glaze should be thicker than when you started, but will thicken more as it cools.) Cool glaze in refrigerator until no longer warm.

Pie Assembly:

Evenly arrange sliced strawberries in a circular pattern on top of pie. Pour chilled glaze on top of pie. Keep refrigerated.

I made this pie 3 0r 4 times during strawberry season. My guy kept asking for it after the first time! It is easy to make and tastes like heaven in every bite! I liked that it didn’t use a jello mix as I rarely have jello boxes in the pantry. The sliced berries look so pretty in the circular pattern on top of the pie. Can’t wait until strawberry season next year!
