Description

Vegetarian Sloppy Joes, a new spin on an old-school favorite!

Ingredients

  • 1 Tablespoon Olve Oil
  • 1 whole Medium Onion, Chopped
  • 1 whole Green Pepper, Chopped
  • 3 cups Short Grain Brown Rice, Cooked
  • 2 cans (16 Oz. Can) Mexican Style Pinto Beans
  • 1 teaspoon Cinnamon
  • 2 teaspoons Cayenne Pepper
  • 2 teaspoons Cumin
  • Salt And Pepper, to taste
  • ¾ cups Hickory Smoke BBQ Sauce
  • 6 whole Whole Grain Buns

Preparation

Heat oil in a large skillet over medium-high heat. Add onion and green pepper; cook 2 to 3 minutes. Add rice, beans, spices and BBQ sauce. Simmer 10 to 15 minutes, until heated through. Serve on buns with choice of toppings. Makes 4-6 servings.

Ok, funny story. I left this recipe for my husband and asked him to get dinner made since I would be home late. I came home, we ate it. It was delicious, but VERY spicy. I asked him about the spices and he assured me he measured correctly. I still thought it was great and would make it again. Then later I mentioned something about what kind of beans were in the recipe – and he said “Oh no! I forgot to add the beans!” Indeed he did. It was just rice with the other ingredients :) But it was still so good and we will make it again soon with the beans.

I made these last night and they were quite tasty! My review is based on your recipe but I did sub out 1 of the pinto for kidney beans because it’s what I had on hand. I truly didn’t think I’d like the cinnamon but it was rather good. I’m a sucker for BBQ sauce so I’m sure I added more than the ¾ cups!
