Description

Red and white quinoa packed with snow cap beans, edamame, cucumbers, feta cheese, fresh cilantro and lime.

Ingredients

  • ½ cups Quinoa, Uncooked
  • 1 cup Snow Cap Beans, Cooked
  • ½ cups Shelled Edamame Beans, Cooked
  • ¼ whole English Cucumber, Thinly Sliced
  • ½ whole Avocado, diced
  • ½ cups Crumbled Feta Cheese
  • ¼ cups Cilantro, Chopped
  • ½ cups Corn Salsa
  • ½ whole Lime, Juiced
  • 1 Tablespoon Olive Oil
  • Salt To Taste
  • Pepper To Taste

Preparation

Cook quinoa according to package directions.

Combine all ingredients in a large bowl and mix until just combined, adjusting salt and pepper to taste.

Refrigerate until cooled, at least 30 minutes, before serving. Enjoy!
