This is one of my “I had to work late and have NO time to make dinner” meals that happens occasionally. You can make them really healthy (as seen here), or not so healthy.
Preheat oven to 350ºF.
Heat 1 teaspoon oil in a skillet over medium heat. Add sliced onions and saute until soft, about 5 minutes. Remove from heat and set aside.
On each tortilla, spread 1/2 teaspoon olive oil. Sprinkle 1/2 teaspoon minced garlic onto each tortilla, then spread white beans, artichoke pieces, spinach leaves, sauteed onions, cheeses and jalapenos (if desired) evenly onto tortillas. Sprinkle with seasoning salt.
Place in the oven, directly on the middle rack, and bake for 10-14 minutes, or until tortilla is crispy. Remove from the oven and allow to cool for around 2 minutes prior to cutting into quarters and serving.

Been making tortilla pizzas for a while now, I put pesto, sliced cherry or grape tomates, and cheese for a healthy one. But if I’m being bad it’s pesto pepperoni, mushrooms, bell pepper and lots of cheese. So good and quick.
