Heirloom tomatoes, fresh basil and herbed goat cheese add delicious Italian flavors to this simple frittata.
Heat oven to broil. Spray a 10-inch cast iron skillet or other oven-safe skillet with cooking spray and heat it over medium high heat.
In a large bowl whisk together the eggs, egg whites, water, basil, salt and pepper. Pour the eggs into the skillet and cook for about 3 minutes.
Arrange the sliced tomatoes and crumbled goat cheese on top of the eggs. Place the skillet in the oven and broil the frittata for another 3-5 minutes, or until the eggs are set and golden on top. Remove from the oven and serve immediately or at room temperature.
