Description

Light and flavorful, these tofu meatballs are perfect dunked in tomato sauce and served over spaghetti!

Ingredients

  • 15-½ ounces, weight Extra Firm Tofu
  • 1 whole Egg, Beaten
  • ½ teaspoons Salt
  • ½ teaspoons Ground Pepper
  • ⅛ teaspoons Garlic Salt
  • 1 teaspoon Dried Parsley Flakes
  • ½ cups Shredded Mozzarella Cheese
  • ¼ cups Bread Crumbs

Preparation

Preheat the oven to 375 F and line a large baking sheet with foil paper. Spray the foil with cooking spray, and set the baking sheet aside.

Blend together all ingredients using your food processor. Or you can use a spatula to combine them in a large bowl.

Use a measuring tablespoon to scoop out the mixture, and use your hands to roll them into balls. Place them on the lined baking sheet.

Bake at 375 F for 30 minutes, flipping the meatballs halfway through.

Let cool slightly, and serve with pasta, or dip them in tomato sauce, and enjoy!

Makes 24 meatballs.

Just made these and they were fantastic! I used ground flaxseed instead of breadcrumbs so it would be gluten free. Will def be making these again1
