Description

This meatless slow-cooker dish is a perfectly hearty and satisfying dish for the cooler months!

Ingredients

  • 3 whole Large Bell Peppers, Chopped
  • ½ cups Onion, Diced
  • 1 clove Garlic, Minced
  • 2 whole Beefsteak Tomatoes, Chopped
  • 1 can (15 Oz.) Tomato Sauce
  • 1 can (15 Oz.) Black Beans, Drained
  • 1 Tablespoon Brown Sugar
  • 1 teaspoon Oregano
  • 1 teaspoon Basil
  • 1 teaspoon Rosemary
  • 2 cups Water
  • 1 cup Cooked Rice

Preparation

Combine all ingredients except the rice in your crockpot. Cover and cook on low for 8 hours.

Thirty minutes before serving, cook the rice according to package directions. Add the cooked rice to the crockpot and combine the mixture.

Serve with your favorite biscuits, cornbread, or tortilla chips!

This sounds great! I’m a vegetarian though. Do you think substituting vegetable stock for the beef stock, would still add the right flavor?

This soup looks delicious but how much is the tomatoe in cups? I have a hard time finding big tomatoes this time of year.

This wasn’t as good as I had hoped. I think it’s the rosemary that makes it odd. I won’t make it again.

A great basis-needs some jazzing up, a little sour cream and cheddar cheese, along with rotel and canned tomatoes as a winter time replacement for the beefsteaks and it was pretty good-mad a TON of soup though. :)

Very yummy and perfect for a cold evening… I didn’t have plain tomato sauce so ended up using spaghetti sauce which tasted great! Thanks for a delicious recipe!
