  • FOR THE BURGERS:
  • 30 ounces, weight Black Beans, Drained
  • 15 ounces, weight Can Of Corn, Drained
  • 1 cup Breadcrumbs
  • 2 whole Eggs, Lightly Beaten
  • ½ teaspoons Salt
  • ½ teaspoons Ground Pepper
  • ½ teaspoons Cumin
  • ½ teaspoons Chili Powder
  • 1 pinch Garlic Powder
  • 3 Tablespoons Jalapeno Peppers, Chopped
  • 4 Tablespoons Olive Oil, For Frying
  • 6 whole Hamburger Buns (up To 8 Depending On The Size Of The Burgers You Make)
  • FOR THE SAUCE:
  • ½ cups Light Sour Cream
  • ½ cups Light Mayonnaise
  • 1 Tablespoon Mustard
  • ½ whole Lemon, Juiced
  • 1 pinch Salt
  • 1 pinch Pepper

Preparation

For the burgers:

In a large bowl, mix together the beans, corn, breadcrumbs, eggs, seasonings and jalapeno peppers until well combined.

Using your hands, form the burger mixture into patties, each about a 1/4 cup worth of mixture. Feel free to make the burgers smaller or larger, depending on your preference of burger size!

Add a few tablespoons of olive oil to a skillet or frying pan over medium heat and cook the burgers until heated through and lightly browned on each side.

Cook them on the grill over a medium fire for a few minutes longer on each side, if desired.

Let the burgers cool slightly, put them on buns, spread with the Lemon Mayo Sauce (recipe follows) and enjoy!

For the sauce:

In a small bowl, whisk the sour cream, mayo, mustard, lemon juice, salt and pepper until combined.

Serve on burgers, and enjoy!
