Description

Something quick, delicious and cheesy to throw together on a weeknight.

Ingredients

  • 3 whole Large Portobello Mushroom Caps
  • 2 Tablespoons Olive Oil
  • ½ teaspoons Thyme, To Taste
  • 3 pinches Salt And Pepper, to taste
  • 3 slices Pepper Jack Cheese
  • 1 pinch Fresh Chives Or Parsley, For Garnish

Preparation

1. Preheat the oven to 375ºF.
2. Trim the stems off the mushrooms and wipe the mushrooms clean with a damp cloth.
3. Mix the olive oil and thyme, and (using your hands) rub the mixture all over the tops and bottoms of the mushrooms. Use more olive oil as needed so that there’s a light coating all over each mushroom.
4. Sprinkle salt and pepper (generously) on both sides of the mushrooms, and place them in an oven-safe dish or pan (stem-side up).
5. Place a slice of cheese on each mushroom, and roast them for 20-25 minutes, until the cheese is bubbly and golden.
6. Garnish with parsley or chives, and serve hot.

This was my 1st attempt with this type of mushroom. I used your technique but altered the recipe based on what I had on hand. I used olive oil, thyme, garlic, red peppers, red pepper flakes and goat cheese and topped with chives. YUM! Thanks for the help :)
