Description

Absolutely tasty!

Ingredients

  • 1 whole Medium Butternut Squash
  • 1 whole Small Yellow Onion, Sliced
  • 1 head Garlic, Separated Into Cloves And Peeled
  • 2 Tablespoons Olive Oil
  • 2 Tablespoons Honey
  • ½ teaspoons Paprika
  • ½ teaspoons Cinnamon
  • ¼ teaspoons Nutmeg

Preparation

1. Preheat oven to 400ºF. Prepare baking sheet with foil and spray with cooking spray.
2. Wash and peel butternut squash. With a fork, poke holes throughout squash and microwave for 5-10 minutes (or until soft enough to easily cut into with a knife).
3. Remove stem of squash and begin to cut into 1-inch chunks. Throw into a big bowl with onion slices and garlic cloves. Add olive oil, honey and spices to bowl. Mix well.
4. Roast in the oven for 30 minutes (or until fork tender). Flip veggies after 15 minutes.
5. Remove and let cool slightly. Use as a topping for salad, an add-in for pasta or eat plain!

Wonderful! This is my go-to recipe for butternut squash. The only difference in the way I prepare it is that I don’t pre-microwave, I just peel, scoop out the seeds, and cut up. The squash and onions carmelize a bit while roasting and the flavor is excellent!
