Description

This is my favorite salad. I love the crunch of the cabbage, the sweetness of the peas, and the smoothness of the avocado. It is accented beautifully by the gentle acidity of the cider vinegar. The magnificent colors make for a lovely presentation when entertaining guests. I love to serve it with savory meat dishes—the vinegar compliments them very well.

Ingredients

  • ½ heads Red Cabbage, Thinly Sliced
  • 1 cup Frozen Petite Peas, Thawed
  • ¼ cups Red Onion, Finely Chopped
  • 1 whole Avocado, Pitted & Cut Into Chunks
  • 2 Tablespoons Olive Oil
  • ½ teaspoons Granulated Garlic Powder
  • ½ teaspoons Kosher Salt
  • ¼ teaspoons Black Pepper
  • 1 Tablespoon Cider Vinegar

Preparation

Combine first four ingredients (cabbage, peas, onions, avocado) in a large mixing bowl. Drizzle olive oil over cabbage and gently toss to coat. Sprinkle granulated garlic, salt and pepper over cabbage; gently toss. Add vinegar and gently mix well. Taste before serving and adjust seasoning if needed.
