Description

Now that it is summer, I find myself craving light meals that don’t intensify the heat of the day. I was thinking today about a book I read a long time ago called Under the Tuscan Sun. In the book, the author talks about a simple meal, found in the Italian countryside, that consisted of pasta, butter, and herbs. Simple. Tasty. Perfect for summer.

Ingredients

  • 1 pinch Salt For The Pasta Water
  • 8 ounces, weight Dry Pasta Of Your Choice
  • 4 Tablespoons Butter
  • 2 sprigs Fresh Rosemary, Finely Chopped
  • 3 sprigs Fresh Thyme, Finely Chopped
  • 1 clove Garlic, Finely Chopped
  • Salt And Pepper, to taste
  • 1 pinch Parmesan Per Serving

Preparation

Bring a pot of water to boil. Salt the water so it tastes like sea water. Add the pasta and cook til al dente. Drain, pour in a serving bowl, and set aside.

Melt butter in a saute pan over medium heat. Add the chopped herbs and cook for one minute. Add the garlic and cook for one minute more.

Pour the butter/herb mixture over the pasta and toss. Give it a taste test. Season with salt and pepper as necessary. Garnish with a sprinkling of parmesan.

This is one of those recipes that you really didn’t need a recipe for but I never would’ve thought of it on my own had I not seen this. It was A-MAZING. It tasted fancy, like something you’d order at a restaurant. I added an extra clove of garlic and I should’ve just followed the recipe because it definitely didn’t need it. So delicious. Thanks for an awesome summer (and anytime really) recipe. I think it would also be great with grilled chicken.
