Now that it is summer, I find myself craving light meals that don’t intensify the heat of the day. I was thinking today about a book I read a long time ago called Under the Tuscan Sun. In the book, the author talks about a simple meal, found in the Italian countryside, that consisted of pasta, butter, and herbs. Simple. Tasty. Perfect for summer.
Bring a pot of water to boil. Salt the water so it tastes like sea water. Add the pasta and cook til al dente. Drain, pour in a serving bowl, and set aside.
Melt butter in a saute pan over medium heat. Add the chopped herbs and cook for one minute. Add the garlic and cook for one minute more.
Pour the butter/herb mixture over the pasta and toss. Give it a taste test. Season with salt and pepper as necessary. Garnish with a sprinkling of parmesan.
